Raspberry Scone Pies
Makes 8, Prep and Cook 45 mins
2 x 125g punnets raspberries
2 tblsps maple syrup
2 tsps cornflour
2 sheets frozen shortcrust pastry, partially thawed
Icing sugar mixture and double cream, to serve
SCONE DOUGH
1 cup self-raising flour
2 tsps baking powder
2 tblsps caster sugar
50g cold unsalted butter, chopped
¾ cup buttermilk
1 Combine raspberries, maple syrup and cornflour in a medium bowl.
To make scone dough, combine flour, baking powder and sugar in medium bowl. Add butter. Use fingertips to rub butter into flour until mixture resembles crumbs. Stir in buttermilk to form
