Raspberry and coconut ice cream
A vegan and naturally sweetened ice cream recipe to cool you down this summer
SERVES 4 PREP 25 MINS, PLUS CHILLING
* 100g pitted Medjool dates
* 250g raspberries, plus extra to serve
* 2 x 400ml can coconut milk, chilled overnight in the fridge
* 1tsp cornflour
