BEEF NACHO BAKE WITH GUACAMOLE

SERVES 4 PREP AND COOK: 50 MINS

500g beef mince
290g packet taco kit
400g can diced tomatoes
400g can red kidney beans, drained, rinsed
1¼ cups grated Tasty cheese

GUACAMOLE

1 avocado, mashed
½ small red onion, finely chopped
¼ cup roughly chopped fresh coriander, plus sprigs to garnish
2 tblsps lime juice

1 Heat an oiled, non-stick frying pan over a high heat. Add mince. Cook, stirring occasionally, until changed in colour. Add seasoning sachet from taco kit. Stir for 1 minute. Add sauce sachet with tomatoes, beans and 1 cup of water. Bring to a boil. Simmer, stirring occasionally, for about 10 minutes, or until slightly thickened.

2 Transfer mixture to an ovenproof dish (8-cup capacity). Top with crushed taco shells combined with grated cheese.

Cook in a moderate oven (180°C) for about 30 minutes, or until golden.
