Chicken traybake with olives, preserved lemons and new potatoes
SERVES 4
• 500g new potatoes, rinsed,• 3 tbsp olive oil• 4 preserved lemons, quartered• 100g drained, pitted green olives• 1 white onion, peeled and quartered• 2 tsp Aleppo pepper flakes or chilli flakes (optional)• 6-8 organic chicken thighs, skin-on and bone-in• 100g feta, crumbled• 100g pomegranate seeds• Small handful of parsley, finely chopped• Sea salt and black pepper
