Monday

Turmeric cauliflower, sweet potato and spinach traybake with coconut sambal

• 2 tbsp coconut oil
• 2 tbsp mustard seeds
• 1 x 400ml tin coconut milk
• 5cm ginger, peeled and finely grated
• 3 garlic cloves, crushed
• 2 tsp ground cumin
• 1½ tsp turmeric
• 1 large cauliflower, outer leaves removed, cut into wedges
• 2 sweet potatoes wedges, skin on
• 100g spinach, washed
• 1 x 400g tin chickpeas, rinsed and drained
• Sea salt

FOR THE SAMBAL

(spicy chilli relish popular in Southeast Asian cuisine)

• 3 tbsp coconut chips/shavings
• 30g fresh coriander, washed
• 1 green chilli, deseeded
• 1 lime, zest and juice
