Chicken caprese burgers
Joe says this is one of the best burger recipes he’s ever created. The combination of chicken, mozzarella and pesto is a real winner.
SERVES 4 PREP 15MINS COOK 35MINS
✱ 4 skinless chicken breasts
✱ 50g plain flour
✱ 1 tsp dried oregano
✱ 1 medium egg
✱ 75g panko breadcrumbs
✱ 2tbsp olive oil
To serve:
✱ 1 x 125-g ball of mozzarella cheese, drained and cut into 8 equal portions
✱ 4 heaped tsp basil pesto
✱ 4 medium tomatoes, sliced
✱ Handful of fresh rocket
✱ 4 ciabatta rolls, halved
Heat the oven to 220C/Gas 7 and line a large baking tray with baking paper.
