SCOTTISH PANCAKES
MAKES 8
Also known as drop scones and what most of us know as crumpets, these fluffy pancakes are great with raspberries, banana, maple syrup and cream.
• 120 g self-raising wheat flour
• 15 ml (1 tbsp) sugar
• generous pinch of salt
• 125 ml (½ cup) milk
• 1 egg
• 15 ml (1 tbsp) melted butter
• butter or oil, for frying
1. Place the flour, sugar and salt in a bowl. In another bowl, whisk together the milk, egg and melted butter. Add the wet mixture to the dry mixture and slowly stir to combine well.
Heat the butter or oil in a frying pan. Fry spoonfuls of batter to form pancakes about 7 cm in diameter – you should be able to fit in 3 or 4 at a time. When bubbles start appearing on the surface, flip them
