PORK & CHEESE RIGATONI BAKE
SERVES 4 PREP 25 MINS COOK 1 HOUR
• 2 tbsp olive oil
• 1 onion, diced
• 2 garlic cloves, crushed
• 500g pork mince
• 1 carrot, diced
• 2 stalks celery, diced
• 2 tbsp tomato paste
• 150ml red wine
• 250ml beef stock
• ½ tsp sugar
• 400g tomato passata
• 400g rigatoni
• ½ cup grated mozzarella
•1/3 cup grated parmesan
• parsley sprigs, to serve
Heat oil in a large frying pan over a medium-high heat. Add onion. Cook 1-2 mins. Add garlic. Cook 30 secs. Add pork mince. Cook, stirring to break up
