Chorizo & potato vegie toss
This flavoursome dish from EveryPlate can be made in just 30 minutes!
SERVES 2 Preheat oven to 240°C (220°C fan-forced). Cut 2 potatoes (400g) into bite-size chunks. Roughly chop 1 red capsicum (250g), 1 medium red onion (180g) and 250g mild chorizo. To roast vegetables, place on an oven tray lined with baking paper (spread over 2 trays if crowded).
