TERIYAKI STEAK AND AUBERGINE SKEWERS
Aubergine complements the beef perfectly and is a great addition to these Japanese-style skewers.
PER SERVING 290 cals, 77g fat, 2.7g sat fat, 26.7g carbs
SERVES 4
✣2 x 225g (8oz) sirloin steaks, trimmed of excess fat and cut into 3cm (1in) pieces
✣1 aubergine, cut into 4cm (1½in) cubes
✣1 large green pepper, deseeded and cut into chunks
✣100ml (3½fl oz) teriyaki sauce
✣1tsp sesame seeds
For the slaw:
✣ ¼ red cabbage, thinly shredded
✣1 carrot, peeled and grated
✣2 spring onions, trimmed, shredded, white and green parts separated
✣15g (½oz) piece fresh ginger, grated
✣Grated zest and juice of ½ lime
✣1tsp sunflower oil
✣1tsp clear honey
✣1tbsp fresh coriander, finely chopped
1 Put the steak, aubergine and pepper into a large bowl and pour over the teriyaki sauce, reserving 1tbsp
