TERIYAKI STEAK AND AUBERGINE SKEWERS

Aubergine complements the beef perfectly and is a great addition to these Japanese-style skewers.

PER SERVING 290 cals, 77g fat, 2.7g sat fat, 26.7g carbs

SERVES 4

2 x 225g (8oz) sirloin steaks, trimmed of excess fat and cut into 3cm (1in) pieces
1 aubergine, cut into 4cm (1½in) cubes
1 large green pepper, deseeded and cut into chunks
100ml (3½fl oz) teriyaki sauce
1tsp sesame seeds

For the slaw:

¼ red cabbage, thinly shredded
1 carrot, peeled and grated
2 spring onions, trimmed, shredded, white and green parts separated
15g (½oz) piece fresh ginger, grated
✣Grated zest and juice of ½ lime
1tsp sunflower oil
1tsp clear honey
1tbsp fresh coriander, finely chopped

1 Put the steak, aubergine and pepper into a large bowl and pour over the teriyaki sauce, reserving 1tbsp
