POPPING MUESLI BARS

Makes roughly 24 muesli bars

• 1 cup raw cashews, roughly chopped
• 1/2 cup pepitas
• 1/4 cup sunflower seeds
• 1/4 cup sesame seeds
• 1/4 cup popcorn kernels, yields 5 cups popcorn
• 1/4 cup hemp seeds
• 1 tbsp chia seeds
• 1/3 cup tahini
• 1/4 cup honey
• 2 tbsp rice malt syrup
• 2 tsp vanilla bean paste
• pinch of sea salt
• 1 tbsp coconut oil

1. Preheat oven to 160°C / 325°F / Gas Mark 3.

2. Line a 24 x 32cm (or medium-size) slice baking tray with baking paper. Roughly chop the cashews and place on the baking tray, along with the pepitas, sunflowers and sesame seeds. Bake for 8 minutes, shaking the tray
