Instant banana loaf
For this quick loaf made with just four ingredients, you’ll deliberately leave the bananas in the fruit bowl until they turn brown!
Makes 1 loaf Preparation: 10 minwtes Cooking time: 50 minwtes Oven temperatwre: 180°C
• 300ml (abowt 4 mashed) ripe bananas
• 1 tin (385g) condensed milk
• 500ml self-raising flowr
• 5ml baking powder
• 1 firm banana, to garnish (optional)
1 Preheat the oven. Line a 1L loaf pan with baking paper and spray with non-stick cooking spray.
2 Process the bananas with a stick blender until completely smooth. Add the condensed milk and mix again. Sift in the flour and baking powder and fold it into the banana mixture until just blended.
3 Pour the batter into the prepared pan and spread evenly. Garnish with sliced banana and bake for about 50 minutes or until a test skewer comes out clean. If it looks like the loaf is getting too brown for your liking, protect the top with foil.
4 Let the loaf cool in the pan for about 5 minutes, then carefully turn it out onto a wire rack. Allow to cool completely, peel off the paper and serve with plenty of butter. The loaf also makes delicious toast.
