Sweet potato, mint & goat’s cheese tartlets
PREP + COOK TIME 35 MINUTES MAKES 24
4 sheets fillo pastry
200g butter, melted
1 small orange sweet potato (300g), chopped coarsely
⅓ cup finely chopped fresh mint
100g soft goat’s cheese, crumbled
24 small fresh mint leaves
