Lunch with The Wiggles

EXTRAS shelled edamame, banana crisps

EXTRAS beetroot & sweet potato dips, beetroot crackers

EXTRAS Halved cherry tomatoes, baby bocconcini

Wheel-y good pasta salad

FEEDS 4 WIGGLES

250g wagon wheels pasta
100g broccoli, chopped
1 cup baby spinach leaves
1½ tablespoons sunflower seeds, toasted
1 clove garlic, crushed
1½ tablespoons finely grated parmesan
¼ cup basil leaves
¼ cup extra virgin olive oil

Cook pasta in a saucepan of boiling water according to packet directions. Drain over a bowl.

Return pasta water to pan; bring to the boil. Meanwhile, cool pasta under cold running water; drain.

Cook broccoli in boiling water for 2 minutes. Remove with a slotted spoon and refresh under running water; drain well. Reserve ½ cup spinach leaves to serve.

Process broccoli with remaining ingredients. Toss pasta with broccoli pesto and remaining spinach leaves.
