Chicken escalope with sweet and sour leeks

When cooking with minimal ingredients, grilling is your friend. Caramelisation from charring (like the leeks in this recipe) makes veg taste sweeter, and cooking poultry in this way helps keep it juicy.

skinless chicken breasts 4
garlic 3 cloves, roughly chopped
rosemary 2 sprigs, leaves finely chopped
olive oil 2 tbsp, plus 1 tsp
baby leeks 320g, tough ends trimmed
red wine vinegar 2½ tbsp
runny honey 1 tbsp
ready roasted red peppers 480g jar, drained and chopped into rough chunks
