Easy weekend BAKES

White chocolate, macadamia & blackberry blondie

MAKES 12 PIECES PREP AND COOKTIME 1 HOUR (+ COOLING TIME)

185g butter, chopped
360g white chocolate, chopped
1¼ cups (275g) caster sugar
3 eggs, beaten lightly
2 teaspoons vanilla extract
1¼ cups (185g) plain flour
¾ cup (105g) self-raising flour
1¼ cups (175g) unsalted macadamias, lightly toasted
150g fresh or frozen blackberries
100g white chocolate, extra, melted, for serving (optional)

1 Combine the butter and half the white chocolate in a large saucepan; stir over very low heat until almost smooth. Remove from heat and cool for 10 minutes.

Meanwhile, preheat the oven to 180ºC (160ºC fan-forced).
