Tuna waldorf salad

PREP TIME 20 MINUTES SERVES 2

250g sugar snap peas, trimmed
Ice cubes
1/3 cup (95g) unsweetened yoghurt (see note)
1 tablespoon lemon juice
2 teaspoons Dijon mustard
1 large red apple, unpeeled, cored, sliced thinly
2 stalks celery trimmed, sliced thinly
2 baby cos lettuce, leaves torn
2 spring onions, sliced thinly
2 tablespoons finely chopped fresh flat-leaf parsley
185g can tuna in springwater, drained, flaked
1 tablespoon walnuts, chopped coarsely

1 Place peas in a bowl. Cover with boiling water. Drain immediately. Return peas to same bowl and cover with cold water.
