All in good time

Idon’t know what it is about having a burger for dinner, but it makes me feel like I’m on holiday, especially if I eat one during the week. There’s lots of creamy slaw paired with these pork burgers, which are seasoned to take on a homemade-pork-sausage vibe.

PORK BURGERS WITH CABBAGE SLAW

680g pork mince
2 tsp kosher salt, plus more as needed
½ tsp ground cumin
½ tsp cayenne pepper
2 tsp fennel seeds freshly ground black pepper
125g (½ cup) plain greek yogurt
2 tbsp cider vinegar
2 tbsp dijon mustard
1 tbsp mayonnaise
¼ head savoy cabbage vegetable oil, for drizzling
4 sandwich rolls or burger buns
