LINGUINE WITH PISTACHIO PESTO AND TUNA

SERVES 4

This simple pasta dish is a complete meal. The tangy lemon flavour gives a lovely kick to tinned tuna. It’s worth making more pesto than you need for this recipe; covered, it keeps for about three days in the fridge and you can serve it with pasta on another occasion or use it to top crostini.
