100g wholemeal penne or gluten-free pasta
200g reduced-fat Greek natural yoghurt
4 tsp sherry vinegar
2 tsp English mustard powder
4 green shallots, finely chopped
6 stalks celery, finely chopped
400g cooked skinless chicken breast fillets, cut into bite-sized chunks (see Cook’s tip)
8 walnut halves, broken into pieces
100g black seedless grapes, halved
8 crisp iceberg lettuce leaves
