LEMON BERRY LOG
SERVES 8 PREP: 20 MINS
300ml tub thickened cream
¼ cup caster sugar
280g jar lemon butter
500g mascarpone cheese
500g packet savoiardi sponge finger biscuits
125g punnet raspberries
125g punnet blueberries
Icing sugar mixture, to decorate
Place cream and sugar in a small bowl of electric mixer. Beat until thickened.
