ANTIPASTO ENTERTAINING PLATTER
SERVES 8 PREP: 1 HOUR
200g block vintage cheddar, cut into thick wedges
200g packet sliced deli meats (See Tip)
Water crackers, sesame breadsticks and bagel crisps, to serve
BLUE CHEESE DIP
150g packet creamy blue cheese, chopped
½ cup sour cream
1 tblsp lemon juice
GREEK SALAD SKEWER BITES
200g packet Greek feta, cut into 24›x›2cm cubes
1 tblsp olive oil
1 tblsp lemon juice
½ tsp dried oregano
2 Lebanese cucumbers
250g punnet small cherry tomatoes, halved
½ cup pitted kalamata olives (24)
1 To make blue cheese dip, process cheese, sour cream and lemon juice in a food processor until smooth. Season with salt and pepper. Transfer to a serving bowl. Garnish with chopped fresh chives, if desired. Cover. Refrigerate.
2 To make Greek salad skewer bites, toss feta with oil, lemon juice and oregano in a large bowl. Season with salt and pepper.
