BEETROOT AND BLACK BEAN OPEN BURGERS

SERVES 6 PREP AND COOK: 40 MINS

400g can black beans, rinsed, drained
425g can diced beetroot, well drained
4 green spring onions, finely chopped
2 carrots, coarsely grated
200g block Greek feta, crumbled
¾ cup self-raising flour
1½ tblsps harissa seasoning
2 eggs, lightly beaten
Vegetable oil, for shallow frying
3 jumbo hamburger rolls, split, toasted
Butter lettuce leaves, tzatziki and snow pea sprouts, to serve

1 To make patties, place beans in a large bowl. Lightly crush with a fork. Add beetroot, onions, carrot, feta, flour and seasoning. Toss to coat. Add eggs. Season with salt and pepper. Mix well.

Heat enough oil in a large, non-stick frying pan, over a medium heat,
