Chicken Nicoise Salad
Serves 4, Prep and Cook 50 mins
1kg kipfler potatoes, washed and scrubbed
2 tblsps olive oil
4 eggs, at room temperature
8 chicken tenderloins,
(450g), trimmed
200g green beans, trimmed, halved diagonally
275g packet baby roma tomatoes, quartered
½ cup pitted kalamata olives, halved
1 cup fresh parsley leaves Bottled Honey & Dijon
Mustard Vinaigrette
Toss potatoes in half the oil in a large roasting pan.
