Stuffings
With little effort, a stuffing can change your fish dinner from ordinary to very special. Whether stuffed inside the fish, sandwiched between fillets or served as a side dish, stuffings are a great way to “stretch” your meal when you have unexpected guests, and to impress everyone over the holidays.
Macadamia Nut Stuffing
INGREDIENTS
6 tablespoons butter1 stalk celery, finely chopped (leaves can be used too)¼ cup onions, finely minced1 clove garlic, finely minced1 cup fine, dry bread crumbs½ teaspoon pepper1 cup macadamia nuts, chopped½ teaspoon dried thyme (or 3 sprigs fresh)¼ teaspoon nutmeg¼ cup parsley, finely chopped1 tablespoon grated orange rind½ teaspoon shoyu or sherry
