Time plan

Freeze ahead:

Make and freeze the gravy up to a month ahead.

Get ahead on Christmas Eve:

✢ Assemble the pigs in blankets and stuffing wreath.
✢ Take the gravy out of the freezer and place it in the fridge to defrost.
✢ Make the infused butter for the turkey.
✢ Assemble the jalousie.
✢ Make the cranberry sauce.

Christmas Day for 2pm starter and 2.30pm main

9.30am Remove turkey from the fridge. Preheat the oven to 200C/Gas 6. Remove the infused butter from the fridge.

10.35am Prep the turkey.

10.45am Place turkey in the oven.

11.15am Assemble the Brussels sprout gratin and blitz up the breadcrumbs. Leave in the fridge until ready to cook.

12.30pm Make the bread sauce and then leave it covered on the side.

12.45pm Add shallots and garlic to the turkey tray.

1pm Prep and parboil the potatoes.

1.15pm Put the oil for the potatoes into the oven.

1.20pm Make the salmon starter.

1.30pm Put potatoes in the oven.

1.45pm Remove the turkey from the oven. Leave to rest. - Put the pigs-in-blankets wreath in the oven.

1.50pm Put the sprout gratin in the oven.

2pm Serve the salmon. Place the jalousie in the oven.
