DLM: Tell us a little bit about your restaurant.

LHF: “The Bindery opened in the autumn of 2017. It’s hard to believe, it’s been four full years. We are an all-day eatery with a market and bakery. We are open six days a week serving breakfast, lunch, and dinner and brunch on the weekends. Our brunches are really fun and elevated and our dinner service is warm and sophisticated.”

DLM: Why did you choose the name The Bindery?

LHF: “I chose the name The Bindery because in LoHi there was a history of Italian craftsman making books. Avanti was a print shop and up the street
