30ml olive oil
1 onion, finely chopped
2 celery stalks, finely chopped
2 garlic cloves, crushed
1.5kg beef mince
salt and freshly ground black pepper
60g tomato paste
185ml red wine
4 bay leaves
4 sprigs thyme
1 x 400g tin whole, peeled tomatoes
1 x 700g bottle tomato passata

1. Heat the oil in a large heavybased saucepan over medium heat. Add the onion, celery and garlic; cook, stirring, for 5 minutes or until the onion softens. Add the mince, season with salt and pepper, and cook, stirring to break up lumps for 5 minutes or until browned.

Add the tomato paste, red wine and herbs to the mince
