600g firm tofu
30ml avocado oil
½ onion, peeled and finely chopped
1 red chilli, finely chopped (optional)
1 garlic clove, finely chopped
2.5ml turmeric
2.5ml curry powder
40ml nutritional yeast
2.5ml salt
200g multicoloured, cocktail tomatoes, washed salt and freshly ground black pepper
1 avocado, halved and peeled, drizzled with lime juice handful baby spinach leaves
1 lime, sliced into wedges, to serve

1. Wrap tofu in a few layers of kitchen towel, and gently squeeze the water out. Set aside.

Heat 15ml of the oil in a medium
