Mac 'n' Cheese Muffins
MAKES 10
INGREDIENTS
200g (1 cup) dried macaroni
50g butter
50g (¹/ ³ cup) plain flour
500ml (2 cups) milk
250g (2 cups) grated cheddar and/or mozzarella
200g baby spinach leaves
200g ham, chopped
Salt flakes and freshly ground black pepper
¼ bunch of chives, finely chopped
METHOD
1 Preheat the oven to 180C (fan-forced). Grease a standard 12-hole muffin tin with butter and line with paper cases.
2 Cook the macaroni until
3 al dente according to the packet
