SERVES 8

INGREDIENTS

1 Tbsp vegetable oil
16 chicken drumettes
1 large onion, thinly sliced
½ cup red curry paste
400g orange kūmara, peeled, cut into chunks
400ml can coconut milk
1½ cups chicken stock
1 bunch broccolini, cut into florets, stems sliced
225g can pineapple pieces
1 Tbsp fish sauce
1 Tbsp brown sugar
1 Tbsp lime juice
200g cherry tomatoes, halved
Basil leaves, to serve
