When is a cheese not a cheese? When it's a Glamorgan sausage - a mix of Caerphilly cheese and leeks fried in breadcrumbs, delicious with a beer. Wales' only native cheese, Caerphilly developed on small dairy farms as a way to use up surplus milk. Scalded at a low temperature and only lightly pressed, the cheese is moister than most.
