Smoky veggie chilli tacos

SERVES 2 These spicy tacos will soon become your go-to dinner.
YOU WILL NEED
Low-cal oil spray
2 red onions, chopped
1 red chilli, deseeded and finely chopped
2 garlic cloves, crushed
350g pack Quorn mince
1tsp smoked paprika
2 x 400g cans chopped tomatoes
125ml vegetable stock
420g can mixed beans, rinsed and drained
350g chopped frozen mixed vegetables
8 taco shells
Grated reduced-fat cheddar, to serve
HOW TO DO IT
1 Heat a large shallow pan and spritz with low-cal oil spray. Add the onions, chilli and garlic and cook for 5 mins to soften.
