Shrimp Cakes with Cucumber Dipping Sauce

INGREDIENTS
500g raw shrimp (prawns), peeled and deveined
2 tsp finely chopped lemongrass, white part only
3 makrut (kaffir) lime leaves, finely chopped
1 small red or green chilli, deseeded and finely chopped
2 tsp lime juice
2 tsp fish sauce
1 free-range egg white
2 tbsp chopped coriander leaves
2 tbsp chopped mint
40g (²/ ³ cup) Panko (Japanese breadcrumbs)
Vegetable oil, for brushing
CUCUMBER DIPPING SAUCE
2 tbsp caster (superfine) sugar
1 Lebanese (short) cucumber
1 small red Asian shallot or French shallot, thinly sliced
1 small red chilli, sliced into thin rings
1 tbsp rice vinegar
