Fish with heirloom tarragon salad
SERVES 6
3 spring onions, dark green ends only
200g punnet baby heirloom/ medley tomatoes, thickly sliced
60g split mixed olives in oil, drained, cut into thin wedges
1 tbsp baby capers in vinegar, drained
2 tbsp chopped tarragon, plus extra sprig tips to garnish
Ground sea salt, cracked black pepper, to season
6 (220g each) white fish fillets (see tip)
