Cheddar-Crusted Grilled Cheese

ONE OF THE defining (and most frequently consumed) foods of my childhood was a grilled cheese sandwich. To this day, I still love to make and eat them for lunch or a quick snack. Obviously I’m not alone: Grilled cheese sandwiches are an institution of American cuisine (see “A Sandwich for All Times”). Knowing that they are endlessly adaptable, I wanted to perfect a variation that I’d seen online and that I hoped would carry this sandwich to an even higher plane of deliciousness.
