Spice-Crusted Pork Fillet With Roast Apple Salad

SERVES: 4 PREPARATION: 20 minutes

Chicken fillets can be used in place of pork, but may need to be cooked for a little longer so be careful not to burn the crust. Baby beetroot can be found with the other tinned vegetables or look for it vacuum-packed in the fresh vegetable section of most supermarkets.

INGREDIENTS:

600 g potatoes, cut into2 granny smith apples, cored and sliced into wedges1 tablespoon honeyolive oil cooking spray600 g pork fillet½ x quantity Middle Eastern spice booster (see page 123)2 x 400 g tins baby beetroot, drained and quartered4 cups rocket leaves1 tablespoon balsamic vinegarlemon wedges, to serve
