Coconut, papaya & macadamia bowls
PREP TIME 15 MINUTES SERVES 4
2 small papaya (1.3kg)
2 cups (560g) coconut yoghurt
½ cup (70g) roasted macadamia halves
⅔ cup (30g) flaked coconut, toasted
1 tablespoon finely grated lime rind (see note)
lime cheeks or wedges, to serve
1 Cut papaya in half lengthways; scoop out the seeds.
