t’s a good time to be a coffee drinker. Continually, consumers are paying more attention to bean sourcing as well as roasting and brewing methods. “COVID-19 was a turning point for the coffee world,” says Shaun Zitani, operations. “Before the pandemic, there was a shift toward automation and faster service. Now our customers are savoring the experience. We’re doing more pour-overs and single brews. People want to see the process, and they appreciate the presentation and theater of it.”
