Quinoa recipes

Gluten-free quinoa pizza base

Serves 4

200 g dry quinoa (rinsed, or treated to remove saponin – see sidebar) cup
⅓ water
11 tsp baking powder
1 medium white potato (optional – it makes a firmer base)
1 tsp olive oil

1. Soak the2. Pre-heat your oven to 230°C.3. Place the quinoa in a blender, along with the water and baking powder, and grind to a slurry.4. Peel and grate the potato (if using), place in a clean cloth, and squeeze out as much moisture as possible.5. Mix the gratings into the slurry.6. Line a baking pan with compostable baking paper. Oil the paper lightly, and pour in the slurry.7. Bake for 15–20 minutes until the base is firm. Add your toppings, and cook as you would a regular pizza.
