SPAGHETTI WITH CRAB AND CHILLI

SERVES 4

250g fresh crab meat
60ml olive oil
2 cloves garlic, chopped
1 large red chilli, deseeded and chopped
300g fresh spaghetti
20g finely chopped flat-leaf parsley
Salt and pepper
Lemon wedges, to serve

■ Tip the crab meat into a small bowl and use your hands or a fork to separate any large chunks. Cover with cling film and refrigerate until needed.

■ Heat the oil in a large frying pan or skillet over a medium heat. Add the garlic and chilli and stir-fry for 1-2 minutes to flavour the oil without burning. Remove the pan from the heat while cooking the pasta.

■ Bring a large saucepan of lightly salted water to the boil. Add the pasta and
