HONEST CITIZEN

ew Zealand’s favourite food-upcycling collective has taken to rescuing wine waste and turning it back into beautiful booze. Citizen already brews beers using unsold bread and replaces 15 per cent of the flour in its sourdough with spent grain flour from the brewing process – but now its winemakers are also creating a range of light wines, called Piquette.
