LOW-CAL DINNERS

Prawn and pak choi stir-fry

SERVES 4

Prawns are the perfect protein for a stir-fry – they are delicious, cook quickly and are bite sized.

YOU WILL NEED

4 nests of egg noodles
1tbsp sesame oil
1 chilli, finely chopped
2cm fresh ginger, finely chopped
6 spring onions, roughly chopped
1 pak choi, leaves separated
100g long- stem broccoli, halved lengthways
1 red pepper, finely sliced
2 carrots, ribboned with a vegetable peeler
2tsp tamari
300g prawns, shelled
10g sunflower seeds
2 limes
Handful of chopped fresh coriander

HOW TO DO IT

1 Place the noodles in a heatproof bowl, pour over boiling water and stir through. Leave for 4 mins, drain and set aside (if the noodles are ‘straight to wok’ you can leave out this part).

Heat the oil in a wok over a medium heat.
