PRAWN NOODLE STIR-FRY

Sesame oil gives instant flavour, and is well worth adding to your storecupboard.

SERVES 4

4 nests of egg noodles
4tbsp sesame oil
1 chilli pepper, finely chopped
2cm (¾in) fresh ginger, finely chopped
6 spring onions, roughly chopped
1 pak choi, leaves separated
100g (3½oz) long-stem broccoli, halved lengthways
1 red pepper, finely sliced
2 carrots, ribboned with a vegetable peeler
2tsp tamari (or soy sauce)
✣Big handful sunflower
