VEAL MARSALA
SERVES 4 PREP 10 MINS COOK 15 MINS
• 2 tbsp olive oil
• 4 veal leg steaks
• 20g butter
• 200g button mushrooms, sliced
• 2 tsp plain flour
• ¼ cup marsala
• ½ cup chicken stock
• ½ cup pure cream
• 350g bag baby spinach leaves
• cooked fresh pappardelle (see tip), to serve
1 In a frying pan, heat half oil on medium. Cook steaks 1 min each side until browned. Transfer to a plate.
2 In same pan, melt butter and cook mushrooms, stirring, 4-5 mins until golden.
Sprinkle flour over mushrooms in pan and cook, stirring, 1 min. Gradually add marsala, stirring, until boiling. Reduce heat
