SWEET POTATO-HAZELNUT SWEET ROLLS
Makes about 10 rolls
These stunning enriched sweet rolls are made with a nutritious orange staple—sweet potatoes. Rolled with a generous slathering of chocolate hazelnut spread and shaped to show off the decadent filling, these buns will be the highlight of your fall cornucopia.
3½ cups (438 grams) all-purpose flour, divided
⅓ cup (73 grams) firmly packed light brown sugar
2¼ teaspoons (7 grams) instant yeast
2 teaspoons (6 grams) kosher salt
1¾ teaspoons (3.5 grams) ground cinnamon, divided
6 tablespoons (84 grams) unsalted butter, softened
⅓ cup (80 grams) sour cream
2 tablespoons (30 grams) water
½ cup (128 grams) puréed peeled cooked sweet potato (see Notes), room temperature
2 large eggs (100 grams), room temperature
¾ cup (222 grams) chocolate hazelnut spread*
2 ounces (57 grams) 64% cacao semisweet chocolate baking bars, finely chopped (about ⅓ cup)
¼ cup (32 grams) finely chopped toasted hazelnuts

1. In the bowl of a stand mixer fitted with the paddle attachment, beat 1 cup (125 grams) flour, brown sugar, yeast, salt, and ¾ teaspoon (1.5 grams) cinnamon at low speed just until combined.
2. In a small saucepan, heat butter, sour cream, and 2 tablespoons (30 grams) water over medium heat, stirring frequently, until butter is melted and an instant-read thermometer registers 120°F (49°C) to 130°F (54°C). Add warm butter mixture to flour mixture; beat at medium speed for 2 minutes. Add sweet potato and eggs; beat for 1 minute, stopping to scrape sides of bowl. With mixer on low speed, gradually add remaining 2½ cups (313 grams) flour, beating until combined.
3. Switch to the dough hook attachment. Beat at medium-low speed until a soft, tacky dough forms, 10 to 12 minutes; scrape down sides of bowl and dough hook. (Dough will mostly clear bowl but may still stick slightly to bottom and sides. Dough should pass the windowpane test; see Notes.) Turn out onto a clean surface, and shape into a ball.
