MISO-GLAZED CHICKEN WITH MELTING SHALLOTS

whole free-range chicken 1
shallots 10, halved
garlic 6 cloves olive oil 3 T
butter 3 T, melted
Woolworths miso paste 3 T
red wine vinegar ½ cup
soya sauce 1 T
honey 1 t
salt, to taste
Preheat the oven to 180°C and line a large oven tray with greaseproof paper. Place the chicken, shallots and garlic in the tray, then drizzle the olive oil over the chicken. Whisk together the butter, miso, vinegar, soya sauce and honey. Pour the miso mixture over the chicken and season with salt.
