EMERALD ORE

This rare form of emerald only appears in the mountains biome and its variants. As of version 1.17, it can appear in the top 220 levels of the map, so you can find it high up in mountains or relatively far below the surface! Each block will drop one emerald when broken using an iron, diamond or Netherite pickaxe.

OCEAN MONUMENTS

Found in the deep ocean biome only, monuments are huge underwater fortresses. The easiest way to find them is to use an ocean explorer map, which will lead you straight to one, but the real rarities are their unusual blocks – as well as prismarine, of which they are made, you can collect prismarine lanterns (using a Silk Touch pickaxe) and sponges, both of which are impossible to get elsewhere!
