COCONUT PANCAKES WITH TROPICAL FRUIT
Serves 4 | Prep 10 mins | Cook 30 mins
Put 3tbsp in a large frying pan over a medium heat and toast for 1-2 mins, stirring constantly, until it starts to turn golden in colour. Transfer to a bowl to cool. Put 115g , ½tbsp , ½tsp and 2½tbsp of the toasted coconut in a bowl and stir until combined. In a jug, whisk together 200ml and 1 . Add the dry ingredients to the jug and whisk until just combined. Set aside. Mist a large pan with and put over a medium heat. Pour one-eighth of the batter into the pan, swirl the, 25g diced fresh , 25g diced fresh , ¼ of a and 1tsp . Finish with a sprinkle of the remaining toasted coconut and serve.
