BACON AND EGG PIZZA
Pizza for breakfast? Well, why not! This is perfect for a weekend brunch. Follow the same basic recipe and add your choice of toppings to make pizzas for family movie night.
MAKES 1 LARGE PIZZA, SERVES 4

PROOFING: 1 HOUR 10 MIN
COOKING: 12 MIN
PIZZA BASE
• 375ml warm water
• 1 sachet (10g) instant yeast
• 10ml (2t) sugar
• 60ml (¼c) olive oil, plus extra for coating
• 5 ml (1t) salt
• 4c (4 × 250ml) flour, plus extra for dusting
TOPPING
• 8 rashers streaky bacon
• 250ml (1c) grated mozzarella cheese
• 4 eggs
• salt and freshly ground black pepper
• extra virgin olive oil for brushing
TO SERVE
• 30 ml (2T) chopped chives (optional)
1 Pizza base Place the water in a large bowl. Sprinkle the yeast over and leave for about 5 minutes until foamy. Add the sugar, olive oil and salt and whisk to combine. Add the flour and mix with your hands until a sticky dough forms.
